Tortilla De Patatas with Peppers & Green Salad.

I made a tortilla a while ago (23 Dec 10) but this time I did it with red peppers. Maybe it’s sacrilege to mess with the classic Spanish tortilla but it does give it a bit of colour and also covers another of MS’s 5 a day.

    • 2 Onions
      6 Eggs
      3 Potatoes
      Seasoning

      My top tip for making this is to do it slowly & watch it. Fry off the onions & take them out of the pan. Cut the raw potato into quarters & then slice. You will then need to shallow fry it until it’s soft. It takes a while but watch it & stir gentle. Once done put it with the onions. Mix the two with the beaten eggs before putting it all back into the pan. Cook on a low heat until it is solid enough on the bottom to slide onto pan lid. Turn it over into the pan & cook until solid. Good luck.

    we’ve got in the fridge!
