Jacket Potato with Cheese & Beans.

Friday 28th January 2011

I don’t cook on Fridays as I get back from work too late so MW takes the wheel and usually does something tasty with fish or eggs. So here is one I made at the weekend for lunch.

Jacket potatoes are an unsung hero in my opinion. They fall into the same category as the breville toasty (When you have one after a long time you realise how good they are.) We generally have potatoes in the house, a lump of cheese and with a bit of luck a tin of beans so I usually make this as a last resort and it never fails to surprise me that they are so good.
Long live the jacket potato!
