“I’m hungry Daddy, what’s for dinner tonight?” Asked my son on the walk home from school.
“Mummy’s going out tonight, with grandma, so it’s just me and you for dinner so we’re having spaghetti with vegemite.” I told him.
I’ve been waiting for an occasion like this for ages so I can try out this quick and easy dish. My wife doesn’t like vegemite but both my son and I do. Zephyrus has been eating it on toast & rice cakes since he was old enough to eat solids. It’s a yeast extract spread that tastes very salty and bitter but is high in B vitamins. It’s one of those things that you either love, or you hate.
“Errr.” Came the reply.
This seems to be the standard answer to most things at the moment.
My priority tonight is to make something that doesn’t take me ages in the kitchen. We have very few quick meals in my house. I sometimes long to be able to make beans on toast for dinner but my conscience wouldn’t let me. As I have said before in other posts, I like to have a balanced meal with carbs, vegetables and protein. I think this meal ticked some of those boxes.
From my point of view it was delicious. I asked Zeph for his thoughts, to which he replied;
I got the recipe from a Nigella Lawson program on tv. The only change I’ve made is to use vegemite instead of marmite.
