Margarita French Bread Pizzas.

I made these as an afternoon snack on Saturday. The 3 of us sat out on our tiny balcony and ate them before we went swimming. 🙂

During the 70s, when I was growing up, convenience food hit the UK. Cooking from scratch made way for something you could take out of the freezer and either put into the oven or better still, into the futuristic microwave oven. My mum was catering in various bars at that time and so embraced the changes alongside traditional ways of cooking. As we used to go to work with my mum we got used to eating most of our meals out of a basket. Scampi & chips, jumbo sausage & chicken nuggets were all served side by side with toasted sandwiches, jacket potatoes & cottage pies.

At home things were different. And although mum didn’t have much time she still managed to get home cooked food on the table.

Something mum used to make, and also something we still ask her to make to this day, is her pizza.

She makes it with a short crust base and tops it with mince meat and cheese. It’s the total opposite of what I would order in a restaurant. I guess nostalgia does funny things to your taste buds.

Zephyrus likes pizza but he likes his Dad’s the best. 😉

    This was a yummy snack I must say. I could have eaten it all but felt guilty taking it from my son!
