Boiled Bacon & Carrots, Peas Pudding, Roasted Parsnips & New Potatoes.

I bought this piece of bacon ages ago with this day in mind.

Mum has made a huge boiled gammon every Christmas for more years than I’ve been born. It’s one of the many highlight of Boxing day. And so it was high time I learnt how to do it myself.

With Mum calling the shots we set to work on the bacon.

Put half a dozen pepper corns in the bottom of a deep sauce pan. Quarter a large onion and add to the pot with a bay leaf. I put 2 whole carrots per person in with the bacon and put enough water to cover. We boiled the whole lot on a low heat for about 1 and a half hours.

While the bacon was simmering we set to work on the peas pudding.

Put the split peas on to boil. Once soft I drained and added a generous knod of butter, salt n’ pepper & mashed the lot. As easy as that. Apparently, when my mum was a girl my nan used to buy this in a tin to serve with her boiled bacon. Not us, only real McCoy would do. 😉

The honey roasted parsnips were drizzled with olive oil, salt n’ pepper & honey and roasted for about 40 minutes, turning after 20 minutes.

Once ready, I took the bacon out to sit for 15 minutes before carving at the table.

While it was sitting Zephy came into the kitchen and asked for a slice.

“Let’s do the mouse again.” He said stealing another tit bit from the side of the plate.

I think he had missed the point.

I started this blog to record the meals I make for my son. One of the many great memories I have of my childhood is the food I ate. The smell of boiling cauliflower on a Sunday morning that steamed up the windows, Lamb sandwiches for tea in front of the tele, cubes of raw jelly at nan’s house and of course mum’s homemade pizza (made with a short crust base) I hope my food creates good memories for my son but if nothing else this blog might jog his memory when he’s older!
